Tuna Tacos with Cilantro Lime Slaw and Chipotle Crema, Chips & Guacamole

Sunday: Soup (I haven't figured it out yet.)

Looks like I need to add some recipes this week. I don't see the chili recipe or Tilapia one.

My New Normal

I don't think I've mentioned that I'm recovering from a concussion. It happened on July 1st.  Please wear a helmet when riding a bicycle. The End.

Last Thursday was the first time I was able to prepare and entire dinner by myself and clean up the kitchen. Last night was my second. I also went to Sam's Club for the first time.  I'm telling you all of this to update whether or not I kept to my menu plan.

I was so exhausted walking through the store, that when I reached the back and saw the Rotisserie Chickens, I knew at that moment it was what was for dinner.

Original Menu:
Monday: Spicy Grilled Chicken, Creamy Potato Salad , Green Salad

Actual Menu:
Monday: Rotisserie Chicken, Mashed Potato Salad (I'll share the recipe tomorrow or the next day.) Green Beans w/roasted peppers (I'll share that recipe also, I loved it!)

Today I went to the grocery store for coffee.  I'm not sure what made me think of it, but I remembered that this was sitting in my refrigerator:


I cut up a watermelon after my trip to Sam's Club and promptly forgot. It will be added to tonight's menu.

Monday Menu



I realize I have not posted much of anything for a very long time.  I am going to try to change that.  Am starting with a Monday Menu.  I'll update throughout the week and post whether or not I stuck to my menu.  I rarely do.

Monday: Spicy Grilled Chicken, Creamy Potato Salad , Green Salad
Tuesday: Spaghetti & Meatballs, Toasted garlic bagels, Salad
Wednesday: Grilled Salmon, 3 bean salad w/smoked gouda, Baked Potatoes
Thursday: Chicken Basil Pasta, Brazilian Cheese Bread, Fruit Salad
Friday: Baked Ziti, Asparagus
Saturday: Salad Night
Sunday: Not sure yet

Potluck Dinners

Who doesn't love a good potluck dinner???  I have so many fond memories of church potluck dinners/picnics, and such.  The great thing is, if you don't like a particular food, you don't have to eat it!  There are plenty more to choose from.  It is like an all-you-can-eat buffet.  (Not that I've ever been to one, lol.)  As a kid these I thought these were wonderful, so not like eating at home when mom was cooking peas with dinner or some other dreaded food.

I am not particularly fond of leftovers.  If I have leftovers, and they are not eaten by someone for lunch, I usually feel compelled to transform them into something else.  A better way to go is  Potluck Night.  Tonight, I am doing just that.  I am probably heating up way too much food, but I personally love to mix mashed potatoes with a pasta or rice dish, have 2 or 3 different kinds of meat and a variety of vegetables.  Today's Potluck is:

BBQ ribs, transformed into pulled pork,
 Beer Cheese Chowder that I made Gluten Free,
(Wow, that's an old photo!)
Olive Chicken& Pepperocini,
Brussel Sprouts & Mushrooms,

Veggies & Dip,
Garlic Mashed Potatoes,
Spaghetti Squash w/Parmesan Cheese
Corn...am I forgetting anything?  Probably, but it is all in the oven, on the stove, or in a crockpot.

I love potluck dinners, especially when there is nothing I dislike.

Monday Menu

I have taken pretty much most of the summer off from blogging.  I'm hoping if I get back in the swing of things, the weather will cool a tad.  This summer the joy of cooking was lost.  Don't get me wrong, I cooked nearly every, single day.  Diet restrictions are killing me.

My son was here for 8 weeks.  He was skeptical of a diet with no gluten.  Partly I felt bad denying him of whole wheat bread, partly I wanted him to eat strictly gluten free just in case he too has Celiac.   I did my part.  His diet would have been gluten free, except for the beer-darn barley!

My mother-in-law, who also lives here, was put on a low potassium diet + other restrictions.  We love potatoes and beans, seeing as how they make for easy and inexpensive side dishes.  Both are loaded with potassium, as are the multitude of fruits abundant in the summer, which by-the-way also make lovely side dishes.

Here goes the menu, and I can't guarantee everything is low potassium, as the rest of the family needs potassium.

Sunday: Olive Chicken & Pepperocini , Asparagus, Brazilian Cheese Bread, Fresh Fruit
Monday: Grilled Korean Pork, Zucchini Pancakes, Kimchi, Sliced Peaches
Tuesday: Rotisserie-Style Chicken, Corn-on-the-Cob, Potatoes or Beans
Actual Tuesday Meal: Chicken Rice Salad, Cobb Salad, Fruit Salad
Wednesday: GF Chicken & Spinach Crepes, Fruit Salad
Actual Wednesday Meal:  Rotisserie-Style Chicken, Corn-on-the-Cob, Garlic Mashed Potatoes
Thursday: Chicken Bacon, Lettuce Wedge Salad w/Bleu Cheese Dressing
Actual Thursday Meal: Roasted Red Pepper Chicken & GF Pasta, Salad w/Bleu Cheese Dressing
Friday: Fish Tacos w/Pico de gallo, guacamole, Arroz Verde, thin-sliced cabbage
Actual Friday Meal: Chicken wrapped in Proscuitto,  GF Pajeon & dipping sauce, Kimchi
Saturday: Chicken Pasta, GF Bagel Slices, Salad

Monday Menu

Anyone remember me? Gosh, I can't believe I have let so much time pass without posting. I could make a lot of excuses, but what a waste of time. Instead, to get back in the cooking mode, I made my week's menu-something I haven't done in 2 months. So here goes:

Monday: BBQ Sandwiches, Carrot Salad, Chips & Dip (Made from leftover Pork Ribs)

Tuesday: Chalupas w/Homemade Salsa & fixings

Wednesday: Chicken Casserole (except I cooked chicken instead of using canned and used pre-cooked shredded bacon), Grapes & Blueberries, Salad, Bread

Thursday: Lemon Pepper Chicken, Twice Baked Potatoes, Roasted Asparagus

Friday: Chicken w/Fresh Basil over gluten free pasta, Salad, Foccacia Bread (I'm experimenting to make this gluten free)

Saturday: Potato Soup (Still need to put up the gluten free version of this soup), Fresh Pineapple,

Sunday: Pot Roast, Mashed Potatoes, Corn, Greens

As always, this menu is subject to change. Looking at it, it seems rather dull this week-not much new to try. Most likely that will change.

Monday menu

Gosh it's been a long time. I'm trying to catch up here. Tonight for dinner, Michael decided that what we had may be his new all time favorite meal ever. Wow! He may even want it for his birthday dinner. Now this could create a problem. We had fish, which a couple of the kids will NOT eat. And his birthday just happens to fall on Christmas Eve. I do like everyone to be happy around the holidays, so we will have to see. In the meantime, I'm posting my menu for the week, including tonight's dinner so I don't forget the husband's favorite meal, lol. Also including what I ended up serving for my inlaws 60th anniversary dinner, which was chosen based on Elisabeth's celiac, Ethan's gluten-free, casein-free diet, and my sil's allergy to soy, eggs, & peanuts.

Saturday Anniversary: Hot Wing Dip w/celery sticks and Fritos, Avocado Black Bean Salsa & Chips, Glazed Pork Loin, Spicy Glazed Chicken, Crash Potatoes, Roasted Broccoli, Spring Salad w/raspberry dressing and CAKE. (The pork and hot wing dip were not soy free.) And yes, there really isn't anything new on this menu. I'm not brave enough to try a totally new menu item when serving 30 people.
Sunday: Potato Soup, (I just realized I never posted my gf version) leftover Avocado Black Bean Salsa and chips, grapes
Monday: Leftover pork made into BBQ pork sandwiches, Steak Fries, leftover Spring Salad
Tuesday: Chicken Rice Casserole, Salad
Wednesday: Blackened Tilapia, Easy Red Potatoes, Mushrooms & Asparagus, Pineapple chunks
Thursday: Chicken Marengo, Rice, Salad
Friday: Pot Roast, Mashed Potatoes & Gravy, Corn, Salad

Menu

Great title, I know. With the temperature drop this week, I made soup nearly every day. Soup is one leftover that usually gets eaten-unlike other leftovers. I tried to incorporate leftovers and odd bits in the fridge at the same time into meal planning this week. So far, this is how it has come out:

Monday: Red Curry Chicken Soup, and fearing it might be too spicy, I also made a potato corn chowder. But I followed a recipe and wish I hadn't. I should have gone with my instincts and added what I thought would be good. Instead, I followed this recipe.
Even with a few additions, it was too bland for my liking. It needed more veggies and seasoning. After adding plenty of chopped ham in addition to the bacon, it was consumed by those who weren't so fond of the other soup.

Tuesday: Chicken Taco Soup (but gluten free) I was happy to have this, as everyone loves it leftover. Sadly, the crockpot keeps it so hot it necessitates cooling down before refrigerating. Somehow I left it cooling all night. It was hard dumping the huge container out the next day that was more than 1 meals worth of food. Darn!

Wednesday: I had leftover zucchini from Monday's soup, so made this zucchini bread.
I also had 2 boneless breasts I didn't use in the taco soup (and boy am I glad I didn't. They would have been thrown out the next day.) And I had ham leftover from Monday also. What to do? So I created this:
I will be adding recipes as I go.
For tonight, I'm thinking of Beef Barley Soup, but without the barley otherwise it won't be gluten free. So I gotta figure a substitute for barley.

Monday Menu

It's September. That means I need to be creative with meals again. I will try to grill as long as possible, but the transition from summer food to fall/winter is coming soon.

Confession: I'm tired of cooking without wheat and its lovely gluten. But onward I will press. Elisabeth's been craving pizza. So I will attempt to make it again. My first try wasn't bad. I think we just need to get used to gf crust being different. Michael may be thrilled as he will finally have thin crust pizza. I will lament the loss of thick, chewy, bread dripping with lots of melted cheese.

Here is my Monday Menu which I wrote out yesterday, but have already made changes to.

Sunday: Pot Roast, Mashed Potatoes & Gravy, Corn Salad (it was to die for), Broccoli
Monday: PW's Coq au vin Chicken in Red Wine Sauce, served over rice, Green Salad
Tuesday: Ham Steaks, Grilled Fresh Pineapple ($1 a piece this week!!!) Cheesy Potatoes

I know, it seems like this was on my menu last week. Guess what, I never made it.

Wednesday: Main Dish Salad BLT Salad? Taco Salad? Chicken & Grape Salad? Teriyaki Chicken Salad? I'm undecided.
Thursday: Grilled Chicken, Strawberry Avocado Salad, Roasted Red Potatoes
Friday: Homemade GF Pizza!!!
Saturday: Hot Wings (Can you believe I've never made these???) What goes with hot wings?

Monday Menu

1st day back to school, so I need to get back to better meal planning. Monday Menu helps me organize my week so that even if I don't stick to it, I at least have ideas. This week one of my internet friends and 2 of her kids is coming to my home. We've never met in person and I was hoping to make a nice dinner for when they arrive. But I can't think of anything to make. I hope I'm inspired before Wednesday. In the meantime, here are my menu ideas: (that I will type out as soon as they come to me.) But if anyone has any great ideas, feel free to offer them.
