Roasted Broccoli


(Sorry, it takes more than a good camera. Ya gotta have an operator who knows how to use it.)

2-3 bunches of broccoli, cut into bite-size pieces
1/4 cup olive oil
2-3 cloves garlic, minced
1 teaspoon coarse ground salt
fresh ground black pepper
lemon wedge

Add garlic to olive oil and let set while cutting up broccoli. On a foil lined cookie sheet, mix broccoli & garlic oil, trying to coat all. Generously grind pepper/salt over the broccoli. Bake at 425 degrees for about 15 minutes or until the broccoli starts to brown a bit at the edges. Squeeze lemon wedge over all and serve.

I served this to three 20 year old young men and we actually ran out. I had more than 2 lbs of broccoli.
