Tuna Tacos with Cilantro Lime Slaw and Chipotle Crema, Chips & Guacamole

(As you can see, I tried to incorporate leftovers as much as possible.)

Meal Planning with a Theme

How has the new meal plan been going? For today, Meatless Monday, I made Cabbage
Soup, cheese/crackers/pretzels. Trying to decide if I want to make some Brazilian Cheese Bread to go with the soup. If it wasn't Meatless Monday, I'd add some salmon dip or a chopped salad with bacon and chicken. I thought about adding sausage to the soup but hey, let's try to actually do a Meatless Monday.

The past week:
Taco Tuesday was New Orleans Jambalya
Wednesday's Whatever was Rotisserie Chicken, and I honestly can't remember what I pared with it.
Thursday's Thaw a Crockpot Meal we ordered out pizza
Fish Friday was Lemon Pepper Tilapia, Baked Potatoes, Coleslaw, and Shrimp Scampi that was to die for.
Soup/Salad Saturday was Chili and Chopped Salad
Sunday Football was Grilled Salmon, Coleslaw, Pasta Salad, Shrimp Scampi

Wednesday: Orange Chicken w/veggies and rice
Thursday: Olive Chicken & Pepperoncinis , Wedge Salad
Friday: Trout, Twice Baked Potatoes, Asparagus w/vinaigrette
Saturday: Potato Soup & Chicken Salad
Sunday: Salmon Dip w/crackers, Nachos or Hot Wing Dip & Chips, Deviled Eggs, Veggies

I realize I have not posted much of anything for a very long time.  I am going to try to change that.  Am starting with a Monday Menu.  I'll update throughout the week and post whether or not I stuck to my menu.  I rarely do.

Tuesday: Spaghetti & Meatballs, Toasted garlic bagels, Salad
Wednesday: Grilled Salmon, 3 bean salad w/smoked gouda, Baked Potatoes
Thursday: Chicken Basil Pasta, Brazilian Cheese Bread, Fruit Salad
Friday: Baked Ziti, Asparagus
Saturday: Salad Night

Monday Menu

Anyone remember me? Gosh, I can't believe I have let so much time pass without posting. I could make a lot of excuses, but what a waste of time. Instead, to get back in the cooking mode, I made my week's menu-something I haven't done in 2 months. So here goes:

Monday: BBQ Sandwiches, Carrot Salad, Chips & Dip (Made from leftover Pork Ribs)

Tuesday: Chalupas w/Homemade Salsa & fixings

Wednesday: Chicken Casserole (except I cooked chicken instead of using canned and used pre-cooked shredded bacon), Grapes & Blueberries, Salad, Bread

Thursday: Lemon Pepper Chicken, Twice Baked Potatoes, Roasted Asparagus

Friday: Chicken w/Fresh Basil over gluten free pasta, Salad, Foccacia Bread (I'm experimenting to make this gluten free)

Saturday: Potato Soup (Still need to put up the gluten free version of this soup), Fresh Pineapple,

Sunday: Pot Roast, Mashed Potatoes, Corn, Greens

As always, this menu is subject to change. Looking at it, it seems rather dull this week-not much new to try. Most likely that will change.

Monday menu

Gosh it's been a long time. I'm trying to catch up here. Tonight for dinner, Michael decided that what we had may be his new all time favorite meal ever. Wow! He may even want it for his birthday dinner. Now this could create a problem. We had fish, which a couple of the kids will NOT eat. And his birthday just happens to fall on Christmas Eve. I do like everyone to be happy around the holidays, so we will have to see. In the meantime, I'm posting my menu for the week, including tonight's dinner so I don't forget the husband's favorite meal, lol. Also including what I ended up serving for my inlaws 60th anniversary dinner, which was chosen based on Elisabeth's celiac, Ethan's gluten-free, casein-free diet, and my sil's allergy to soy, eggs, & peanuts.

Saturday Anniversary: Hot Wing Dip w/celery sticks and Fritos, Avocado Black Bean Salsa & Chips, Glazed Pork Loin, Spicy Glazed Chicken, Crash Potatoes, Roasted Broccoli, Spring Salad w/raspberry dressing and CAKE. (The pork and hot wing dip were not soy free.) And yes, there really isn't anything new on this menu. I'm not brave enough to try a totally new menu item when serving 30 people.
Sunday: Potato Soup, (I just realized I never posted my gf version) leftover Avocado Black Bean Salsa and chips, grapes
Monday: Leftover pork made into BBQ pork sandwiches, Steak Fries, leftover Spring Salad
Tuesday: Chicken Rice Casserole, Salad
Wednesday: Blackened Tilapia, Easy Red Potatoes, Mushrooms & Asparagus, Pineapple chunks
Thursday: Chicken Marengo, Rice, Salad
Friday: Pot Roast, Mashed Potatoes & Gravy, Corn, Salad

Monday Menu

It's September. That means I need to be creative with meals again. I will try to grill as long as possible, but the transition from summer food to fall/winter is coming soon.

Confession: I'm tired of cooking without wheat and its lovely gluten. But onward I will press. Elisabeth's been craving pizza. So I will attempt to make it again. My first try wasn't bad. I think we just need to get used to gf crust being different. Michael may be thrilled as he will finally have thin crust pizza. I will lament the loss of thick, chewy, bread dripping with lots of melted cheese.

Here is my Monday Menu which I wrote out yesterday, but have already made changes to.

Sunday: Pot Roast, Mashed Potatoes & Gravy, Corn Salad (it was to die for), Broccoli
Monday: PW's Coq au vin Chicken in Red Wine Sauce, served over rice, Green Salad
Tuesday: Ham Steaks, Grilled Fresh Pineapple ($1 a piece this week!!!) Cheesy Potatoes

I know, it seems like this was on my menu last week. Guess what, I never made it.

Wednesday: Main Dish Salad BLT Salad? Taco Salad? Chicken & Grape Salad? Teriyaki Chicken Salad? I'm undecided.
Thursday: Grilled Chicken, Strawberry Avocado Salad, Roasted Red Potatoes
Friday: Homemade GF Pizza!!!
Saturday: Hot Wings (Can you believe I've never made these???) What goes with hot wings?

Monday Menu

1st day back to school, so I need to get back to better meal planning. Monday Menu helps me organize my week so that even if I don't stick to it, I at least have ideas. This week one of my internet friends and 2 of her kids is coming to my home. We've never met in person and I was hoping to make a nice dinner for when they arrive. But I can't think of anything to make. I hope I'm inspired before Wednesday. In the meantime, here are my menu ideas: (that I will type out as soon as they come to me.) But if anyone has any great ideas, feel free to offer them.

Monday: Grilled Ham Steaks & Pineapple, w/grilled vegetables

Sunday: Grilled London Broil, Spaghetti Squash & Vegetables, Half-baked Potatoes, Fruit
Monday: Grilled Chicken, Tomato & Mozzarella salad, Fresh Green Beans
Tuesday: Pork Fried Rice, Asian Salad w/Honey Ginger Dressing, Cherries & Grapes
Wednesday: Honey glazed chicken, Asparagus Salad (or zucchini,) Potato Wedges
Thursday: Shredded Beef Tacos w/Fixings, Refried Beans, Watermelon
Friday: Ham steaks, Grilled Pineapple, Cold Rice Salad
4th of July: Something festive, lol. (Means I haven't decided yet.)

Reworked Menu

My new menu for this week looked more like this:

Tuesday, an hour before dinner, we found out Elisabeth has Celiac Sprue. Because it was such a warm day, I ditched the soup idea. At the last minute I decided I could make Thursday's dinner. Just as I was about to mix the marinade, I realized the honey glaze had soy sauce in it. After a quick check, with wheat being a key ingredient, I had to make a quick switch. So instead:

Tuesday: Grilled BBQ chicken, twice-baked potatoes, steamed broccoli, fresh pineapple
Thursday: Lemon Pepper Chicken, Roasted Potatoes & Veggies (I adjust the recipe a bit and will share), Salad-Elisabeth like ranch dressing. I will make some homemade, but in the meantime, the one I like best, Marzetti's is gluten free!

I also made chocolate chip date cake gluten free, that I will also add the adjusted recipe-everyone loved it!

Tomorrows spaghetti is out. I know there is gluten free pasta, but El doesn't really like spaghetti anyway. I'll figure something else out.

For Friday: I may stick with London Broil w/appropriate changes, maybe Crash Hot Potatoes, refried beans and a vegetable and/or salad.

This is as far as I've gotten.

Friday: Grilled London Broil, Twice-baked potatoes, Refried Beans, Green Salad

Saturday: Spaghetti, Salad, Garlic Bread

Monday Menu

I figured it was about time for a week/month, year? of budget meals. (No guarantees I won't break out and splurge.)

Today I found some great deals at the grocery store. I bought a 20 lb. turkey for $9.95. I should be able to get several meals from this. Eggs & Potatoes were a great buy too. And I have ham and a ham bone leftover from Easter!~ Not sure which meals I'll make yet, but this is what we've had so far and ideas for other days.

Monday: Another Chili Dish (97% fat free ground beef I bought less than half price), homemade bread
Tuesday: Ham & Egg Casserole (need to use up the boiled eggs & ham) Fresh Pineapple
Wednesday: Roast Turkey, Mashed Potatoes, Broccoli, Salad
Thursday: Turkey Tacos w/black bean salsa
Friday:Bean Soup, Homemade Bread, Fruit Salad
Saturday: Chili Rellenos, Refried Beans, Lettuce & Tomato Salad

Tuesday: Burgers, because I have to try out my new hamburger patty maker. Last week when I couldn't find mine and had to produce hand made, nicely shaped patties, I declared "I'm never making burgers again!" For my birthday, guess what the kids bought me?
Wednesday: Hilary's Birthday! Her Choice
Thursday: I'm having a procedure done, so I should probably make something ahead. But I don't think I will have time on Hilary's birthday.
Friday: I don't know.
