GF Zucchini Bread


2 small zucchini (2 cups) grated zucchini
2 eggs
2 cups GF Baking Mix (I like Pamela's Baking & Pancake Mix)
1/2 cup sugar
1/2 cup brown sugar
1/4 cup vegetable oil or melted butter
2 1/2 tsp. cinnamon
1/2 tsp. salt

Glaze:
1/2 cup powdered sugar
1/4 tsp. vanilla
1 TBS orange juice or milk
a smidge of grated orange peel, to taste (optional)

Grate zucchini onto paper towel to absorb moisture. Mix baking mix, salt & cinnamon together. In another bowl beat eggs, oil, and sugar, & vanilla together. Add dry ingredients and blend. Fold in grated zucchini. Spoon into large greased loaf pan Bake at 350 degrees for approximately 55 minutes or until toothpick comes out clean. Remove from oven and let cool 5-10 minutes before removing from pan to cool completely. Blend glaze ingredients in a small bowl. Drizzle bread with glaze. Tastes almost like cake...delicious.
