My new menu for this week looked more like this:
Tuesday, an hour before dinner, we found out Elisabeth has Celiac Sprue. Because it was such a warm day, I ditched the soup idea. At the last minute I decided I could make Thursday's dinner. Just as I was about to mix the marinade, I realized the honey glaze had soy sauce in it. After a quick check, with wheat being a key ingredient, I had to make a quick switch. So instead:
Tuesday: Grilled BBQ chicken, twice-baked potatoes, steamed broccoli, fresh pineapple
Thursday: Lemon Pepper Chicken, Roasted Potatoes & Veggies (I adjust the recipe a bit and will share), Salad-Elisabeth like ranch dressing. I will make some homemade, but in the meantime, the one I like best, Marzetti's is gluten free!
I also made chocolate chip date cake gluten free, that I will also add the adjusted recipe-everyone loved it!
Tomorrows spaghetti is out. I know there is gluten free pasta, but El doesn't really like spaghetti anyway. I'll figure something else out.
For Friday: I may stick with London Broil w/appropriate changes, maybe Crash Hot Potatoes, refried beans and a vegetable and/or salad.
This is as far as I've gotten.
