Arugula salad with lemon vinaigrette




1/4 cup olive oil
1 tsp. lemon zest
2 TBS fresh lemon juice
1 garlic clove, minced
1/2 tsp. sugar

5-6 oz. baby arugula
1/2 cup grape tomatoes, cut in half
1/4 cup shredded or shaved parmesan cheese

Mix dressing ingredients. Put arugula and parmesan in a bowl and pour dressing over. Mix well.
