Cold Rice Salad



Salad Ingredients:
1 cup rice
1/2 cup sliced celery
1/4 cup grated carrots
1/4 cup diced onion
1/2 cup chopped red pepper
1/4 cup chopped parsley

Dressing:
1/4 cup rice wine vinegar
1/2 tsp. garlic salt
1/4 tsp. oregano
1/4 tsp. onion powder
1/8 tsp. fresh ground pepper
pinch of dill (optional)
1/3 cup vegetable or olive oil

Cook rice, chill. (Can mix it up right away, but this salad is served cold, not hot.) Chopped vegetbles and fold into rice. Mix salad dressing. Pour over rice and refrigerate until ready to serve.

I used Balasmic Vinegar and it was delicious!
