Fry Bread

NOT GLUTEN FREE
I use this recipe to make Gyros.

2 cups flour
1 TBS baking powder
1 tsp salt
1 cup milk
oil for frying,

Mix together the flour, baking powder & salt. Add milk & continue mixing. If necessary, add extra flour so the dough isn't too sticky and can be kneaded. On a floured surface, knead 5 minutes or so until smooth.

Let the dough rest for 5 minutes. Add oil to wok or deep pan. Preferably, oil should be 1-2 inches deep so bread will properly cook. Divide dough into 4-6 balls. Roll out or shape into 1/4 inch thick circles. If using a rolling pin, let rest again from the flattening.

Fry in hot oil, 375 degrees, until light golden brown in color, turn. These cook quickly. Drain on paper towels.

I usually double this recipe. Can be used in any flat bread recipe or for gyros. If you have any leftover, drizzle with honey or powdered sugar as a sopapilla.
