Roast Chicken with Potatoes & Peppers


1 Chicken whole or cut-up (or any combination of pieces)
1 red pepper, julienned
1 green pepper, julienned
1 yellow pepper, julienned
1 onion wedge sliced
4-5 red potatoes sliced into wedges
1 pkg. italian dressing
olive oil
red wine vinegar
salt
pepper

Here are the chopped vegetables.
Mix salad dressing according to directions. Place chicken pieces into roasting pan. Brush 2 TBS of italian dressing over skin. Bake 30 minutes at 375 degrees. Slice vegetables. Add onions and potatoes, salt, pepper and additional dressing. Add peppers and pour remaining dressing over chicken. Bake another 1 1/2 hours or until tender and nicely browned. The chicken as it is baking.

Joanne, I'm making this on Saturday. I just wanted to make sure, do I bake the chicken alone for 30 min. and then add all the other stuff? How long do I bake it after I add the veggies and dressing? Thanks for your help!

I did bake it alone for 30 minutes, with some of the dressing. Then I added everything else and baked for about an hour. Hope your family likes it.
