Fried Egg Sandwiches

Believe it or not, I have been cooking. I just haven't paid close attention to proportions of ingredients. This makes it difficult to post a recipe, unless I write "a little of this, a bit of that..." For some people that works, and for others not so much. If I can get to feeling better this week, I should be better at posting. So for today, here is a simple breakfast-another one that can be eaten on the run when necessary.




1 egg
2 Slices of toast
butter or margarine
mustard

Cook egg over medium heat, with a bit of butter. Be sure to pop the yoke. (In restaurant terms, "over hard".) Butter both slices of toast, add mustard and egg.

We eat these all the time! :) But we put ketchup on them instead of mustard.
